There’s this place called Campos Coffee. They make the BEST avocado toast I’ve ever had! The only problem is one order (2 slices of gf bread) is $11. That’s a little more than two LOAVES of bread. Needless to say I will always love Campos coffee and their delicious food menu (I don’t drink coffee), but knew I needed to find a more budget friendly way to still enjoy my favorite food, so I created a copycat to their avocado toast and it tastes pretty close to the real thing!
If you’re thinking, “very funny- I barely have time for toast in the morning, let alone gourmet toast”, I hear you! I have a VERY active toddler so super involved meals are not for me at this time. What I do, is I pick a breakfast (whether that’s green smoothie, avo toast, etc.), lunch, and snack that I will eat Mon-Fri. I then meal prep Sunday and switch it around or alternate each day so I don’t get sick of it! This is one of those. I’d pre-wash the micro greens, pre-wash and cut the radishes and even pre-crumble the goat cheese if you want. Here we go! Enjoy!
Makes enough for 1 slice avocado toast (depending on how much avocado you like on yours)
INGREDIENTS:
- 1 3/4 teaspoon Dukkah (I got mine at Trader Joe’s for around $2!)
- 1/4 teaspoon Pink Himalayan Sea Salt
- 1 teaspoon EVOO (extra virgin olive oil)
- 1/2 avocado
- 1 teaspoon fresh lime juice I use this brand as a 1:1 sub for fresh
- Goat cheese log (I prefer this over the pre-crumbled one since that one has anti-caking agents). This also tastes great whipped with a little honey and stored until ready to use. I used honey goat cheese for this but have also had it with plain
- Micro greens (Trader Joe’s has this for a great price)
- Watermelon radish, sliced thinly
Method:
- Mash avocado and mix with seasonings, EVOO, and lime juice
- Spread on warm toast
- Top with micro greens, next goat cheese, lastly watermelon radishes
