I LOVE this sandwich! If you don’t like smoked salmon, you can just omit it. I’ve had it both ways and both are equally mouth-watering!
Ingredients:
- Vegan cream cheese (recipe here)
- Avocado
- Cucumber
- Micro greens and/or sprouts
- Lettuce (I like the butter radicchio mix at Trader Joe’s)
- Smoked Salmon (optional)
- Bread (I love this on the Bread Srsly rolls!). The sourdough somehow just makes all the flavors even more amazing! I especially love that there are no guns or rices. Great toasted and not toasted
Method:
- Spread a generous layer of cream cheese on both sides
- Next top one side with smashed avocado (I use 1/2 an avocado per sandwich)
- Top the opposite side with cucumbers sliced thinly
- Salt and pepper (I like fresh ground) the avocado and cucumber
- Top with micro greens, lettuce, and smoked salmon (I only use thin layers and not tons of it)
** To make vegan, omit salmon
