We have a family rule that we all eat what I make. I love pancakes and am not super picky about them, but don’t make them very often because when I do, Dal smiles, eats them and thanks me, but when I press him on if he likes them, he always smiles and says, I’m just not a fan of gluten free pancakes. Anytime I hear something like this, I take it as a challenge. I know I can find good recipes to replace anything we miss and don’t stop until I do haha.
We have been through SO many recipes through the years, but this is the only recipe we have all absolutely loved! When Dal tried these, he ate so many and was thrilled and now we’re all thrilled that we finally have an amazing grain free, dairy free pancake recipe that we all love and can eat often!! They’re also nut free, for those who need that. We’ve made these quite a few times since we found them to test different ways, and they’ve been awesome each time!!
They’re light, perfect amount of fluff, and actually taste normal! None of that gummy texture or weird taste that often comes from gluten free or grain free pancakes!

Recipe Notes:
- I know I’m in the minority, but I am not a fluffy pancake fan. I like barely enough fluff to make it a pancake texture. If this is you, I recommend omitting the baking powder and only doing the baking soda. I’ve tried it using the full amount written in the recipe plus baking powder, and they were still great, just more fluffy than my preferred pancake
- Coconut flour can taste so weird in recipes, but I promise, it doesn’t taste weird in the least.
- I tried subbing almond milk for coconut milk and they taste great with that too!
- I use arrowroot instead of tapioca!
- Olive oil tastes great in place of butter for dairy free
- When she says cook low and slow, she’s not kidding! I cooked mine pretty low- I found mine burned even on medium heat.
- I cooked them with olive oil spray. They burned every time when I used butter for cooking. Its smoke point is too low.
- Other topping ideas besides/in addition to butter and syrup : berries, bananas, hemp seeds.
- To reheat, we put them in the toaster on setting 1!
