I love squash. Any and every kind, but Dal does not. This, however, is the first squash dish I’ve ever made that Dal has LOVED! He gets excited every time he sees I’m making it! It’s crunchy on the outside, soft on the inside and salty! I love these and hope you do too! Recipe is here from Rachel Cooks!
Notes:
- I salt and pepper it on the cookie sheet to try and get all the pieces evenly coated!
- I sub avocado oil for olive since it’s had a higher smoke point
