Unplugging until the new year, but just HAD to hop on here and share our new favorite Christmas brunch! My husband isn’t a quiche fan, but LOVED this! I am a quiche fan, but still thought it was exceptional!
We are spending Christmas this year with my in-laws and are SO excited! We can’t wait to spend Christmas with them and everyone, but we still wanted our special family Christmas with just our little family, so we told LO just this year we convinced Santa to come twice and celebrated Christmas today.
We wanted to make sure we could just be present and with LO instead of my husband and I in the kitchen cooking and cleaning, so in prep for Christmas I made this pull apart bread (more similar to cinnamon rolls) from Sweet Laurel and froze it before cooking (instructions for that in linked recipe), and this quiche from Fed and Fit and froze it and the pie crust all assembled raw. I pulled them both out this morning and stuck them in the oven at 400 for 30 min and we had breakfast! I tried to serve with fruit but it went bad overnight! To drink with our brunch, we mixed sparkling water and OJ – you could do this with any juice- just make sure it’s 100% juice (an idea my cousin gave me!). We started with filling about 1/3 of the glass with sparkling water and adjusted to taste.
While we waited for breakfast to bake, we sipped this hot cocoa recipe with homemade marshmallows I’d made last night (from Sweet Laurel Cookbook), but a similar recipe is linked in the hot chocolate recipe, just omit the pumpkin spices. They’re melted in the hot cocoa in the pic 🙂 Anyway, I just had to share a brunch that we loved so much and took abt 5 min to assemble this morning and was an easy cleanup! We’ll definitely be doing Christmas and other holidays this way going forward!
Recipe Notes:
- I omit the cheese for dairy free and it still tastes amazing!
- I subbed coconut milk for cream- can use any nut milk
- I’ve subbed this Kerrygold cheese for Gouda in the last. I buy it as Costco for a great price and grate it so it doesn’t have anti caking agents
- I layered shallot, half of the bacon, cheese, then remainder of bacon
- To add more veggies, sauté 1 c spinach finely chopped and 3-4 mushrooms chopped with 1 clove minced garlic in 1 T olive oil then layer on top of bacon
- I used crust A recipe of the ones linked
- To prepare ahead, fully prepare except for baking, then cover with double layers tightly (I had to use plastic for this 😬) and place in freezer. To bake, put in preheated oven (remove plastic) at 400 and put frozen quiche in and bake for 30-40 min until set.
- I froze mine for abt 48 hours, and I read its best not to freeze longer, but I haven’t tried so I wouldn’t know 🙂
