My husband is not a fan of peppermint bark and was really skeptical as I made this and then when he tried it, his eyes got wide and he said, “this is the best peppermint bark ever!!!” That confirmed it needed to be on here 😉

Recipe Notes:
- I doubled this recipe for the chocolate layer and just dumped the melted choc and maple into the pan as the base. This made for a slightly thicker base which we were fans of!
- My husband hates coconut and I’ve had a lot of recipes with coconut butter go awry, but this was perfect and seriously the best we’ve had!
- I used Yum Earth candy canes. They have simpler ingredients and no artificial colors! They taste just like the normal ones too! Wholesome brand also makes some that I haven’t tried but look good. Unfortunately I haven’t found any refined sugar free ones yet, but at least these have simple ingredients and no artificial colors (the most important part IMO). To crush them just measure roughly 1/2 cup and throw it in the blender
- For coconut butter layer, I NEVER buy coconut butter. It’s crazy expensive. Just buy a bag of organic, unsweetened shredded coconut (about $2) and dump it all in the food processor. Let it run for about 5 min until liquidy
- I used a 8×11.5” pan because I didn’t have a 9×9. You could prob go as small as 8×8 or anywhere between that and mine, but I wouldn’t go bigger than 8×11.5!
