I’m back! I hope you had a wonderful holiday season. Ours was so nice. I look forward to that time all year because we save our PTO for it so my husband is home from work and we just get concentrated time as a family. We also celebrated our 6th anniversary! Anyway, it was nice and I’m excited for the new year. I have awesome content headed your way that I can’t wait to share! We’ll start with overnight oats!
I have tried overnight oats once and it was disgusting. Cold, mushy oats? No thanks. Then I decided to give this recipe a try and fell in love!

Recipe Notes:
- I use 1/4 cup yogurt instead of 1/2 cup. I like Culina and Coyo and just use the plain flavor. Most yogurt, especially dairy free, is full of gums, sugar, or additives. These only have good ingredients! Culina is my favorite because it’s in a glass jar that I can wash and reuse. I’ve tried every flavor and love them all. I’ve only tried the plain and bourbon vanilla in the oats though!
- I top mine with one small banana or half a large one, a handful of raspberries and blueberries, about 1/2-1 teaspoon bee pollen (omit for vegan), 2 tablespoons salted sunflower seeds, 1 tablespoon hemp seeds, small drizzle of 100% maple syrup (about 1 tablespoon), and any berries I have on hand
- Other great toppings would be almonds, pecans, walnuts, goji berries, pomegranates, etc!
