This salad recipe is from How Sweet Eats. What this picture doesn’t do justice to is the homemade clumps of nuts, that are so mouth-watering incredible.
As I’ve mentioned before, I like lots of toppings, crunch, and flavor in a salad and How Sweet Eats just gets that! I always know when I’m making a salad if hers that it will be wonderful!
Notes:
- my husband can’t handle spice so I omitted the smoked paprika on the pepitas and the red pepper flakes on the pecans
- As I was making this, I realized I didn’t have shallots, so I had to just omit that. I’ve tried it with and without and both ways are great!
- I swapped goat cheese for the sharp cheddar due to a food sensitivity. I’ve never tried it with sharp cheddar (I’m sure it’s delicious on it), but I’ve done it with Trader Joe’s unexpected cheddar and it’s amazing!
- I do the normal kale with this, but I’m sure Tuscan kale is good too with it
- I get my pecans at Costco and pepitas at Trader Joe’s. Buying nuts at those places (especially Costco) is far more cost effective
- To make dairy-free, omit the cheese or sub a vegan cheese
