I LOVE this ice cream! It takes abt 5 min to whip up, 20 or less to churn in your ice cream maker (depending on what kind you have) and is healthy!!!
I love having avocado in this, not because it masks veggies (I think it can be problematic not teaching your children to love veggies but always masking them), but because it’s just another place to add veggies!
This recipe is from Paleo Gluten Free Eats! I love how innovative and creative she is with her recipes. Blows my mind!
Recipe notes:
- I subbed the can of coconut milk for cashew or almond. I use Malk brand. I haven’t used a brand like almond breeze that has all the fillers, but I think that would come out too thin, but I could be wrong
- I used this recipe for chocolate chips
- I omitted the egg
- I used an avocado in it, but make sure to use a small one. When I used a small one, I couldn’t even remotely taste the avocado. I used my husband who hates avocados as a litmus test and he said this is the best mint choc chip he’s ever had (he’s honest when he doesn’t like something 😉)
