This cake recipe is from Minimalist Baker. I love her blog! As I mentioned in the other post, this is the cake my mom requests every year for her bday. She has extremely high standards for food and is very picky, so we take it seriously when she says a certain food is her favorite 😉
As I mentioned before, this one is dense, but not too dense and is more of a traditional carrot cake.
Notes:
- It calls for 3 flax eggs, but you can sub for 3 real eggs if you can tolerate eggs and it works great
- Instead of 3/4 c. chopped walnuts in the cake, I subbed 1/2 cup raisins as she suggested in her recipe.
- I used this recipe for the frosting. You can use normal butter and cream cheese if not df. You can make with powdered sugar or maple syrup to taste. It will be less stiff with maple syrup, but should still work just fine as long as there isn’t too much maple syrup.
- You could also mix and match with some of the other frosting recipes posted
- I just topped the cake with some chopped walnuts
- I used this gf flour blend
- Fun decorating idea: you could make it in muffin tins for personalized little cakes (just be sure to grease well and adjust the baking time) , cut each mini cake in half horizontally and put frosting in the middle and on top and top with flowers. Here is a guide to decorating with flowers. Make sure to use safe ones!
