We rarely cook the same thing twice in our house, not because we don’t like what we are eating, but because I’m always so anxious to try new recipes! This one, however, we do cook more because it is SO fast and SO easy and perfect for those crazy nights! It takes 10 min total to cook. 10!! I always plan it for the nights when I know we just aren’t going to have time. Anyway, point of this all is, this salmon is amazing, easy, and full of flavor. A few notes about this recipe:
1) I was nervous at first about the broiling of the salmon- I was concerned it wouldn’t cook it thoroughly enough, but don’t be! It does a fantastic job! But, do make sure you set the timer and watch it near the end since we all know how quickly things can burn in the broiler!
2) I was out of paprika the first time I made this, so I subbed Chili powder, and loved it so much, I’ve never added the paprika, so I omit the paprika and up the chili powder to 1 Tablespoon
3) Don’t be scared of the Chili powder. My mom was so nervous when I recommended this recipe that it would be too spicy, but it’s not AT ALL. I LOVE spicy. My preferred level of spice is the type that makes your eyes water and sinuses clear as you eat it. My husband, however, has zero tolerance for spice, so I always use his tastebuds as a guide when recommending recipes since I know I’m a little strange 😉
We served this with tricolor carrots and herbed quinoa, but roasted broccoli and mashed potatoes would also be phenomenal, which is what we do typically- recipes for both those coming soon (hint: they’re not your average mashed potatoes and broccoli)! We hope you love this recipe as much as us!
