I’m not an arugula fan. It’s far too peppery for me, but this combo left me in love!! Recipe is from Fed and Fit. I’ve rarely tried anything of hers I didn’t love (and it’s impossible to love absolutely everything someone creates!) Highly recommend her site!
Recipe Notes:
- I sometimes add a little more lemon and salt but it depends. Taste as is first then go from there
- I love this topped with Parmesan (omit for Vegan obvs).
- This is especially good with a heavy meal- pastas, heavy meat dishes, etc.
- Though I have not tried this, if you wanted to make it a meal, you could omit the Parmesan and top it with Parmesan chicken!
- You can also add sunflower seeds and r pepitas for extra crunch, but I love it as is!
