Instant Pot Korean Beef

This Korean beef recipe is from Pinch of Yum! It’s pretty rare that I make anything from her site that I don’t love and this is no exception. It’s so so good! I changed quite a bit due to food sensitivities or what I had on hand.

Notes:

  • I subbed golden delicious apples for pears due to food sensitivity
  • I subbed 1/4 t. for fresh, due to what I had on hand
  • Subbed liquid aminos for soy sauce due to what I had on hand, but tamari or coconut aminos would work too
  • Subbed maple syrup for brown sugar to make refined sugar free
  • Subbed avocado oil for sesame oil due to food sensitivities
  • Subbed steak chunks for beef chuck or top sirloin due to what I had on hand from Butcher Box
  • Note abt kimchi and tortillas below

Her original recipe for Korean BBQ Beef Burritos is here. And the instant pot one for tacos is here. I loosely followed the burrito one (with all my adjustments), and just used the instant pot one for style of beef (pieces/chunks) and cooking time and method. Her recipe below with all the above mentioned subs added in and the instant pot cooking time (from her other post added in). (She also gives other cooking method tips if you don’t want to go the Instant Pot route).

BEEF INGREDIENTS

  • 2 lbs. top sirloin, beef chuck, or steak tips cut into 6-8 pieces
  • 2 golden delicious apples , peeled and cut into chunks
  • 1/4 teaspoon ground ginger
  • 4 cloves garlic
  • 1/4 cup liquid aminos
  • 1/4 cup maple syrup
  • 1 tablespoon avocado oil

BURRITO INGREDIENTS

  • cooked rice
  • cilantro, basil, maybe even mint if you’re bold
  • kimchi
  • I had never had kimchi but wanted to try it because I know the fermented nature and probiotics are so so good for you, but when I opened the bag, I was overwhelmed with how HORRIBLE they smell, but I figured I’d try it anyway and it was delicious. That being said, the flavor of the kimchi may not be for everyone
  • sriracha mayo or yum yum sauce
  • I wanted to do sriracha Mayo, but didn’t have sriracha, so I just mixed hot sauce with mayo to taste and loved it
  • large flour tortillas
  • I love Siete food tortillas- they have all different kinds of flours (coconut, cassava, and nut based) for those with allergies

METHOD

1. KOREAN BBQ BEEF: Cut the beef into pieces and pulse the apple, garlic, and ginger through a food processor. Put all the ingredients for the beef in an Instant Pot. Cook on high pressure for 45 min, release steam and shred.

2. Prep all your burrito fillings (cook the rice, mince the herbs, prepare the sauce).

3. Lay a flour tortilla flat on a piece of foil. Place the rice, meat, herbs, kimchi, and sauce in the middle of the tortilla. Fold the sides up, then roll it up front to back and wrap it with foil if you’re saving it for later. (We (POY) freeze these for easy dinners and lunches, and we also eat many of them immediately because they’re so darn good.) * I (Christianne) have not tried freezing them with the gf tortillas.
