Grain Free Fried “Rice”

Since my recent Hashimotos diagnosis, I decided to try going grain free, dairy free to see if it alleviated any of my symptoms (more on this later!). Due to this, I’ve been modifying and remaking all our favorites because I like to have my cake and eat it too 😉 Dallin loves fried rice, but has tried cauliflower fried rice and wasn’t a fan, but when he tried this and excitedly said, “it actually tastes like fried rice!!”, I knew I had to share!

Ingredients

  • 6 eggs, whisked
  • 36 Oz frozen riced cauliflower
  • 3/4 cup water
  • 1/2 onion, chopped in very small pieces
  • 1 1/4 cup frozen peas
  • 1 1/2 cup ham, cubed
  • Olive oil
  • Salt and pepper

Method

  1. Spray pan with olive oil (I use the pure olive oil cooking spray, but very lightly drizzling olive oil will work too!), heat pan to medium, salt and pepper eggs to your liking (just do the same amount you would if making plain scrambled eggs. Stirring constantly, scramble the eggs until just barely underdone (they’ll cook more later). Set aside
  2. In the same pan, spray or drizzle olive oil and combine cauliflower, onion, and water, salt and pepper (to taste). Sauté until all water is absorbed and cauliflower is soft, light, and fluffy
  3. I’m lazy and put the peas in at this point, but if you prefer the steamed texture, steam your peas in a separate pan at this pount
  4. Add ham, eggs, and peas to pan (if cooking the peas separately wait to add them until ready to serve, so they aren’t overcooked)
  5. Taste and add salt and pepper if necessary. It should taste full of flavor, so if it isn’t, a little salt and pepper at this point will bring out the natural flavors. Enjoy!!
