The idea for this pizza came to mind the other day when I was eating a similarly “fancy pizza” and I had to try it out! It was incredible and I was not disappointed!
Ingredients:
- Pizza dough (I used this recipe- don’t let it get too done or it gets too crispy). For grain free I love this recipe. For store bought grain free, I love this . For store bought crust, Trader Joe’s has an organic, frozen one!
- 7.5 oz ricotta cheese (use Kite Hill for dairy free)
- 4 oz Italian shredded cheese (omit for dairy free)
- 1 cup arugula
- 4 dried Figs, thinly sliced
- 2 oz prosciutto, thinly sliced (starting from the short end, roll the prosciutto like a log then thinly slice)
- 1/4 cup walnuts, chopped
- Olive oil
- Balsamic vinegar
- Morton fancy sea salt
Method
- Rub thin layer of oil over prepared dough
- Cover with ricotta and Italian cheese
- Top with arugula then fig, prosciutto, and walnuts
- Follow dough instructions for baking
- Drizzle with olive oil, balsamic, and a sprinkle of flaky salt. Enjoy!!
Notes:
- I have not tried a dairy free dub for the Italian cheese, but if I were making it df, I’d just stick with Kite Hill df ricotta and not add any other cheese, but I have not tried this snd cannot guarantee the outcome
