Easy Meals, Snacks, and Desserts During This Time

Foods To Grab A Few Of (but not hoard šŸ˜‰!)

  • 1 Costco sized box of spinach
    • Transfer to a stasher bag and freeze so you can enjoy lots of green smoothies or spinach in meals without lots of grocery store trips
  • Frozen riced cauliflower
    • I love Trader Joe’s. I always have about 4 bags on hand and go through abt 2-3 in a week because I add it to EVERYTHING (smoothies, casseroles, etc.) since you can’t even tell it’s in there
  • Frozen fruit and veggies
    • For smoothies, casseroles, and just about everything! Right now my freezer is full of cauliflower rice, peas, spinach, and green beans!
  • Canned salmon
  • Canned tuna
  • Coconut milk
    • I love Trader Joe’s organic ones. I sub this for cream or milk in almost any recipe for df
  • Bulk Nuts
    • For granola (especially grain free), desserts, snacks, and homemade nut milk!
  • Eggs
  • Potatoes
  • Sweet Potatoes
  • Onions
  • Squash
  • Brussels Sprouts

I think it’s easiest to make bulk meals that can be reheated and eaten throughout the week with minimal ingredients or using frozen ingredients. Here are some of my favorites below! All are refined sugar free and gluten free and most are or can be made grain free and dairy free.

Breakfasts

  • Breakfast Casseroles and Egg Dishes
    • Paleo Breakfast Casserole (grain free, df)
    • Maple Pecan Banana Breakfast Bake (haven’t tried this one yet, but am this week!!) (grain free, df)
    • Breakfast Casserole (gf, can be grain free)
    • Roasted Brussels Sprouts Bacon and Eggs (grain free, can be df)
    • Quiche Lorraine (grain free, can be df)
    • Quinoa Kale Egg Muffins (grain free)
  • Waffles (gf, df)
  • Muffins
    • Carrot Applesauce Muffins (gf, can be df)
    • Banana Chocolate Chip Muffins (gf, can be df)
    • Pumpkin Chocolate Chip Muffins (gf, can be df)
    • Caramel Apple Muffins (grain free, df)
  • Classic (egg, bacon, toast)
  • Green smoothies
    • Blueberry Veggie Smoothie (grain free, df)
    • Cinnamon Sweet Potato Pie Smoothie (grain free, df)
    • Oat Milkshake (gluten free, df)
    • Get Your Greens In Smoothie (grain free, df)
  • Granola
    • Cherry Chocolate Granola (gf, df)
    • Buckwheat Granola (gf, df)
    • Pumpkin Granola (gf, df)
    • Super Chunky Coconut Granola (gf, df)
    • Grain Free Granola With Strawberries (grain free, df)

    • Cinnamon Pullaway Bread (grain free, df)

    • Breakfast Sweet Potato (gf, df)

Snacks

  • Granola (recipes above)
  • Popcorn
    • I love Lesser Evil Organic Pink Himalayan Sea Salt. With popcorn I try to always buy organic popcorn, but if not organic, for sure non GMO. Unless labeled non GMO, popcorn is always GMO. Organic automatically means no GMO, but also no chemical fertilizers or pesticides. Non GMO just means same chemicals are used, but not GMOs.
  • Crackers and hummus
    • I love Hu crackers and Simple Mills crackers with Trader Joe’s organic hummus (great ingredients and no citric acid šŸ‘šŸ‘)
  • Guac and crackers or veggies
  • Kale chips
  • Beef sticks
    • I like Epic bars, but Dal hates them, so def not something everyone loves. I’d recommend buying one at a time to taste and ensure you like it
  • Turkey cucumber rolls
    • Cut cucumbers in strips then wrap them in turkey deli meat (learned from Branch Basics)
  • Avocado with everything seasoning and crackers and a squeeze of lime
  • Chips and salsa
    • I love Siete chips
  • Protein drink
    • Nuzest chocolate digestive blend blended with frozen cauliflower and almond milk
  • Perfect bar
    • The mint chocolate is Dal’s favorite
  • RX bar
    • Ingredients aren’t perfect, but still a good choice and you can buy in bulk at Costco
  • Muffins (recipes above)
  • Boiled egg and fruit (cover eggs with water, bring to a boil then simmer for 7 min)
  • Fruit and nuts
  • Paleo Trail mix
    • I love the one at Costco
  • Apples and nut/seed butter
  • Celery and nut/seed butter
  • Go Raw Snacks
    • I love the salt and vinegar snacking seeds and banana spirulina seeded bites

Lunch

  • A lot of the snacks listed above could double as a lunch. Leftovers are also a great choice!
  • Roasted Veggies on Cauliflower Pita
    • This one is more time intensive but great leftovers!
  • Sandwiches loaded with deli meat and veggies
    • My fav toppings are sprouts, avocado, lettuce, tomato, vegan cream cheese, and shredded carrots

Dinner

  • No Boil Pasta Bake (grain free, df)
    • Sub Miokonos cheese to make df
    • SautĆ© riced cauliflower with spinach to add more veggies
    • Sub Capello’s grain free pasta to make grain free. Haven’t done it in this recipe, but I plan to!
  • Lasagna
    • Freezer Meal Lasagna Florentine (grain free, df, vegan)
      • Use Capello’s grain free lasagna noodles to make grain free
      • Use Miokono’s cheese to make df
    • Easiest Lasagna Ever (gf)
      • Use gf or grain free noodles
  • Healing Chicken Soup with Turmeric and Ginger (grain free, df)
  • Mushroom and Wild Rice Soup
  • Golden Soup
  • Pumpkin Soup with Kale Topping
  • Lemony Chicken and Veggie Soup
  • Ribs and sweet potatoes
  • Baked potato/sweet potato bar
  • Chicken tacos
  • Salmon Burrito bowls
  • Cauliflower Walnut Taco Meat
    • We love these as burrito bowls, but also great in tacos
  • Nachos
    • I love these for a busy weeknight dinner! I especially love to top with veggies like roasted cauliflower, guac, pico de gallo,
  • Chicken Broccoli and Rice Casserole
  • Roast
  • Maple Glazed salmon with veggies
  • Gutsy mom casserole
  • Breakfast for dinner
  • Tuna Noodle Casserole
    • I use Capello’s pasta for grain free (don’t boil- let thaw and break into penne size pieces)
    • Coconut milk and miokonos mozzarella cheese for df
  • Salmon burgers
    • Sub almond flour for breadcrumbs to be grain free.
    • If you don’t have the ingredients for the slaw on hand, it’s still incredible without it! I’d serve with roasted veggies or baked potato/sweet potato!

Dessert

  • Brownies (grain free, egg free, df)
  • Chocolate Chip Cookies (grain free, egg free, df)
  • Sugar cookies (grain free, egg free, df)
  • Sweet Laurel Cookbook
    • Everything in here is just amazing. Some of our favorites are the brownies, vegan caramel, alfajores, coconut jam cake, etc!
