Coconut Lime Ginger Smoothie

This smoothie is so great! It’s bright, fresh, and just tastes like summer 🙂 This recipe is modified from Juanique Roney’s. I found it when I did the free trial of the Gutsy Health membership and published this with her permission. I made the following changes: changed liquid ratio, added a banana, cauliflower, and more lime.

Notes:

  • We recommend organic when possible. I’ve found farmer’s markets and Trader Joe’s make this more feasible
  • My favorite coconut milk is the organic canned coconut milk at TJ’s. The ingredients are perfect (no fillers or gums!) and it’s one of the cheapest I’ve found! Lastly, their coconut milk cans are BPA free!!
  • I love organic Santa Cruz pure lime juice. I always have this and the lemon one in my fridge. Saves money and time and ingredients are just lime!
  • If you have a hard time using up your spinach, try freezing it. Works great and reduces waste!
  • Costco and Trader Joe’s both have great organic riced cauliflower

Ingredients

  • 1 1/3 cups coconut milk
  • 1 lime
  • 2 cups spinach
  • 1 frozen banana
  • 4 teaspoons minced ginger
  • 1/2 cup frozen riced cauliflower

Method

  1. Blend spinach and coconut milk, lime, and ginger
  2. Add cauliflower and blend then banana and blend
