Hi there! Today is day 1 of my quarantine recipe series. These are recipes I have found, created, or modified that were especially good during this time due to 1 or multiple of the following: their ease, nourishing power, customizable, easy to find ingredients, and/or ingredients you already have on hand.
First recipe is this chunky coconut granola from Minimalist Baker! All the ingredients are ones I typically have on hand, it’s nourishing, quick, and customizable!
The only ingredients are:
- Oats
- Unsweetened Coconut flakes
- Slivered raw almonds (I typically sub chopped raw almonds)
- Raw pecan halves
- Coconut sugar
- Sea salt
- Coconut oil
- Maple syrup
- Pure vanilla extract
Recipe Notes:
- I omit the dried fruit, but do like to top with fresh berries (also great without!)
