Are you a soup in summer person? I am. My two favorite dinners to make are casseroles and soups because they’re easy, fast, great leftovers, and you can just load them up with veggies, so as long as I have AC, I’m a soup year round person 😊 I also try to mainly make food that’s good as leftovers. That way I only cook abt 3 times a week. As I mention below, this is even better the next day! 🥳
This soup is from Fed and Fit and is amazing! She’s a soup genius! Dal was a little nervous when he found out I was making it, but ended up loving it and told me it’s his favorite soup I’ve ever made! Wahoo! It’s so full of flavor and unbelievable. It’s also grain free, and dairy free.
Recipe Notes:
- This soup is amazing fresh but even better as leftovers since the flavors meld!
- Homemade bone broth is incredible and extra nourishing in this. When I make a whole chicken, I try to just make a bunch of batches of broth and freeze them. Recipe here
- If you buy broth (I do all the time too!) just make sure you read the ingredients. Only stuff you use in your kitchen and try to avoid “yeast extract” or “chicken flavor”
- The only adjustment I made is I was out of lemon and used lime and it worked great!
- I used olive oil instead of butter as suggested in the recipe for df
- Though I have not tried this, I would guess you could sub veggie broth for chicken for vegan
- This can be made in the Instant Pot or on the stove
- If you’re on the Candida protocol, this can be eaten on that!
