I know this may seem like a weird concept and weird combo of flavors and if you don’t like sweet potato, this isn’t for you, but if you do, try it! It’s so delicious and definitely a breakfast/lunch I look forward to! Enjoy!
Ingredients:
- Banana
- Almond butter (only ingredients should be almonds, oil, salt- nothing more)
- Hemp seeds
- Butter or olive oil (optional)
- Chocolate chunks (I love this recipe)
- Salt
* I also think granola would taste great on this!
Method:
- Preheat oven to 425
- Scrub sweet potato and pat dry
- Lightly rub with avocado oil, sprinkle with kosher salt, and pierce with a fork
- Bake for 45 min-1 hour
- Top with butter or a spritz of olive oil (I love this one). You can also skip this step
- Top with sliced bananas, hemp seeds, and chocolate chunks, drizzle with almond butter and salt to taste
