Hi friends! This past week I was on vacation with my little family. We try hard to unplug when together, so that’s why I was a little MIA, because I know you were very concerned, checking consistently for new posts (kidding obviously haha). It was so wonderful to get such concentrated time with each other and there’s nothing like unplugging and just enjoying time with LO and Dal!
Now, this is a time of year where we’re surrounded by sweets and food that isn’t as nutrient dense. I honestly believe it’s fine to eat that all in moderation, but I try to just eat as nutrient dense as I can and then my body is well equipped to handle the occasional treat, so I thought this would be a great time for a veggie smoothie! This smoothie makes me feel SO amazing! The recipe is from Minimalist Baker!
Recipe Notes:
- I half this when just for me
- I just buy the organic riced cauliflower from TJ’s and use that raw for smoothies- works great!
- I’m not a huge fan of smoothie bowls, so I start with recommended milk amount and add as much as needed to make it a smoothie texture. It varies depending on if the banana is frozen and how big it is
- I skipped the Ashwaghanda and Spirulina, but only because I don’t have any! As for Ashwaghanda, I LOVE it, but there’s conflicting research during pregnancy and breastfeeding. Make sure to check with your health care provider if you plan to use it to ensure it’s right for you
- I subbed almond butter for peanut butter
- I added 1 teaspoon of Super Greens powder. I really love their company and trust them. They are extremely careful with sourcing and they go through two layers of heavy metal testing, so I highly recommend them, but they don’t taste great on their own, so I add them to smoothies already full of greens. I’d start with 1/2 teaspoon and work your way up to 1 teaspoon if you prefer sweeter smoothies. It also will taste just as great if omitted
- I recommend using ripe, frozen bananas. Non frozen, doesn’t taste sweet enough to me in the smoothie
- Since I modified the ingredients, it comes out light grey/purplish, not the bright green like on MB.
Recipe here! Enjoy!
