Beef Stir Fry

I’m not a huge Stir-Fry person. I don’t hate it but I don’t think I’ve ever been meal planning and just had to have Stir-Fry. However, I was at Trader Joe’s and saw some Stir-Fry veggies that looked good, so I bought them and cauliflower rice for a different dish and then it just all came together and we were all really happy with this burst of randomness and it will definitely be a repeat at our house.

I bought some Stir-Fry beef at Trader Joe’s (just small, thinly cut slices, but it probably would’ve been easier with just one big piece, but really any cut of beef would prob work- probably even ground (though I haven’t tried that).

I used this recipe from Delish, but made some subs. I have noticed SO many main dishes, especially meat recipes with SUGAR. WHY?? We really don’t NEED to use refined sugar in anything, but in meat? There really is absolutely no need. FYI, almost any time you are making a sauce for meat, maple syrup can be a 1:1 sub for brown sugar. If It’s white sugar, I think honey makes a better sub, but it’s not 1:1. I’ll do a post on refined sugar subs later 🙂

INGREDIENTS

1/2 c. chicken broth

1/3 c. Liquid aminos or coconut aminos

1/4 c. pure maple syrup

2 cloves garlic, minced

Juice of 1 lime

1 lb. flank steak

1 tbsp. Avocado oil

kosher salt

Freshly ground black pepper

1 bag Trader Joe’s Stir Fry (or similar product. TJ’s is 16 oz and made up of shredded carrots, pea pods, bean sprouts, mushrooms, edamame, bamboo shoots, and water chestnuts)

1- 12 oz bag Trader Joe’s frozen organic cauliflower rice (any organic cauliflower rice will do or just homemade, just make sure it’s 12 oz)

Cooked rice, for serving

DIRECTIONS

  1. In a medium bowl, combine chicken broth, liquid aminos, maple syrup, garlic, and lime juice.
  2. Heat a large skillet over high heat. Rub steak with oil and add to skillet. Sear 3 minutes per side, then transfer to a cutting board and slice.
  3. Add sauce to skillet and deglaze pan, then add all the vegetables and steak and let simmer in sauce. Season generously with salt and pepper. Let simmer 8 to 10 minutes until vegetables and steak are cooked through.
  4. Serve over rice.
