These donuts are 💣💫 We are OBSESSED with these!! They are gf, df, can be vegan/egg free (or not), and refined sugar free!
This recipe is from Minimalist Baker! Recipe here!
Recipe Notes:
- The recipe calls for 1/4 cup aquafaba (the liquid in a can of chickpeas. I do not use this because I don’t think it being in an aluminum can, especially those that typically have BPA or BPS is very safe. You can make it from scratch, but it feels a little too time intensive to me. However, if you can’t eat eggs, this is an awesome choice! You could save the broth after cooking them (best option) or if you use a can or bag (like the ones from Thrive), make sure its BPA Free! All that to say, it’s to mimic egg whites, so I just did 1/4 cup egg whites (almost 2 eggs). If you make this sub, you can still follow the directions for the aquafaba (whip just like you would’ve the aquafaba
- I used coconut sugar, not cane sugar
- The cinnamon sugar topping looks good but I could resist the idea of maple with apple cider donuts. I tested 3 different maple toppings and we (my husband and I) couldn’t decide, so I’ll list them all! They go in the order of the pics above!
- This one is more mild and filled with warm spices (go to the glaze part of the recipe). It also uses coconut butter which can be quite expensive. I just make my own by throwing a bag of unsweetened coconut flakes in the food processor and running until smooth and drippy
- This one has a slight tang (in a good way) (go to the glaze part of the recipe)
- The last one I used was just Maple Butter. I bought mine from TJ’s and it tasted amazing on the donuts. It should only contain 1 ingredient- maple syrup. You can also make it. There is a recipe here, but I have not tried this recipe and it looks quite involved.
- The recipe says you may need to add 2 tablespoons flour. I did not do this
- As for the apple cider it calls for, make sure it doesn’t have added sugar. A lot do. I love Trader Joe’s. The only ingredients are apples, lemon, and spices
- I used this gf flour
- I used this donut pan. It goes in the dishwasher to clean, but can be a little annoying if not placed in there perfectly, but it’s so nice to have all my donuts always come out perfect instead of coming out in chunks! Plus my old one was non stick, which we know isn’t a safe material. Read this article for more on that.
