I LOVE THIS SMOOTHIE. Every week, I pick a green/veggie smoothie to drink throughout the week (I make it every day or a few days that week). There are some that I just keep making after the week is done and just keep making until I feel like something else! Those are the ones I know I should post. This, my friends, is one of those. While it may seem strange to have sweet potatoes in a smoothie, trust me- it’s amazing. If you like anything remotely tasting like pumpkin pie, this one’s for you! It obviously doesn’t taste like pumpkin, but has a very similar flavor.
This recipe is from Ambitious Kitchen. I’m always in awe at her skill and creativity in the kitchen!!
Recipe Notes:
⁃ Any dairy free milk will do (pecan maple is especially amazing)
⁃ I used dairy free yogurt
⁃ I used almond butter as recommended on AK
⁃ I buy a bulk bag of organic sweet potatoes at Trader Joe’s and peel, bake, and freeze them on Sunday’s and it lasts the whole week or more!
⁃ I subbed allspice for cloves since I didn’t have any cloves and it worked great
– one day I didn’t have yogurt, so I did 3/4 c plain cashew kefir (got mine at Trader Joe’s) instead of df milk and 1/2 c. Cashew milk (or any kind of nut milk) instead of the yogurt and it tasted amazing!!
