These are amazing! I’m always in search of/in need of a healthy snack I can keep on hand and grab and go and these are the perfect things! These also have optional collagen in them. I didn’t want to bore those who don’t care, so I put my thoughts on it after the recipe for those interested!
Recipe Notes:
- I subbed almond butter for peanut butter due to food sensitivity
- I used this recipe for chocolate chips to keep it refined sugar free
- I topped them with kosher salt and loved it! The recipe calls for salt, but I didn’t add any in, just topped it
- You can also leave out the collagen if preferred

And for collagen thoughts… I’ve been really skeptical of this whole collagen craze, but decided lately to read up on it. I am very skeptical adding any processed thing/supplement to my diet. What collagen is is kind of gross to me, but the benefits are pretty amazing. The thing that really sold me on it is that it can aid in improving gut and joint health (source). Since I’ve incorporated it into my diet, I have definitely noticed a change/improvement in my gut health.
Here’s the conclusion I came to. In the olden days, I think people likely ate every part of the animal they could and made their own bone broth so they got all the nutrients and benefits. But now in our ultraprocessed world, we only eat certain parts and miss out on the benefits of other parts. I personally limit my collagen to roughly the same amount as the meat I eat (1 meal, so twice a week with leftovers). This isn’t a hard and fast rule- just what I aim for. I’m definitely not of the feeling that I’m going to be putting it in every single thing, but recipes that have it are definitely a great option in my opinion to incorporate!
