YOU GUYS! This waffle recipe is 😍😍😍 My old go-to recipe had to be temporarily retired since I can’t have eggs (food sensitivity while my stomach heals) and I didn’t think a vegan egg would allow the waffle to hold together well enough. Don’t worry, I’ll still post the other one sometime! But, in the meantime, I searched for a df, gf, egg-free one 😅 and found this one by Minimalist Baker. She never disappoints! I hope you love these as much as us
Recipe Notes:
- MB uses a homemade gf blend. I prefer to just use my own store bought (this one). You can also buy it at Costco. It’s great! My waffles came out very dense and it may be due to this. They’re still amazing, just dense.
- If you want lighter waffles, add more df milk. I probably added 1/4-1/2 c. Just pour little by little until desired consistency. I’ve done it without this step and they’re still awesome
- Another option is to add one or two whipped egg whites until fluffy. I haven’t tried this, but have in other waffles and pancakes and it’s awesome.
- I used cashew milk as my df milk
- I used apple cider vinegar, avocado oil, and maple syrup (she gives different options for each of those)
- I also added the optional cinnamon and vanilla
- Make sure you have aluminum free baking powder!
- To take these to the next level, top with this cashew whipped cream, peaches or nectarines, strawberries, and pure maple syrup. They are also GREAT plain though!
