This is the perfect recipe for an appetizer that looks fancy but is super easy and fast or a great snack!
Use this recipe for avocado toast. Start with 1/2 t. lime juice and work up to what you prefer- since you don’t have the thick toast to absorb some flavor, the avocado flavor will be extra prominent.
Recipe below:
INGREDIENTS:
- 1 3/4 teaspoon Dukkah (I got mine at Trader Joe’s for around $2!)
- 1/4 teaspoon Pink Himalayan Sea Salt
- 1 teaspoon EVOO (extra virgin olive oil)
- 1/2 avocado
- 1 teaspoon fresh lime juice I use this brand as a 1:1 sub for fresh
- Goat cheese log (I prefer this over the pre-crumbled one since that one has anti-caking agents). This is also great whipped with a little honey, then stored in the fridge until use.
- Micro greens (Trader Joe’s has this for a great price)
- Watermelon radish, sliced thinly
- Crackers (I love Simple Mills Rosemary and Sea Salt or plain Sea Salt crackers). They’re cheapest at Costco or Amazon
METHOD:
- Mash avocado
- Mix with seasonings, EVOO, and lime juice
- Top crackers (I prefer this brand) with avocado mixture, micro greens, goat cheese, and watermelon radishes
