Growing up, we had a lot of fun traditions around holidays and my mom went all out. I love any excuse to celebrate pretty much anything. LO def takes after me in that area, because LO will just randomly declare some days that it’s someone of his choosing’s bday and spends the day making paper decorations and a “party” – it’s adorable.
One of my favorite things abt kids is that you can pretty much make anything exciting with not much more effort. I want my kids childhood to be magical- full of special memories, so I try to create simple traditions wherever I can. (Disclaimer: for anyone who this is making feel bad- please don’t! I’m not a Pinterest mom AT ALL- I stick to simple, relatively quick things for most “magic” – I promise it’s not intense like it sounds!) I love hearing others simple, attainable ideas so some of ours are: rainy/snowy days we have hot cocoa, cooking together, these mummy truffles we make before Halloween (those ones simple but more time intensive), the day after Halloween we decorate for Xmas and the kids get the xmas pjs and a holiday book, I try to do advent calendars, but I often forget 😬. Anyway, I decided it would be fun to start seasonal celebrations- a special breakfast and a book to celebrate each season. That was a long winded way of saying for our happy fall breakfast, I made these apple cider donut pancakes. They def take longer than basic pancakes, but not by much and are so special and delicious. I also doubled the recipe so we can eat them throughout the week! For their books I got Happy Halloween, Daniel Tiger! and Room on the Broom (the latter is adorable and my favorite Halloween book- not spooky at all!)

Recipe Notes:
- I doubled the recipe
- I added 1 scoop PaleoValley bone broth per batch (so 2 scoops for double batch)
- I omitted the cinnamon sugar coating because I didn’t want more steps but also didn’t want the sugar
- I cut sugar down to 4 tablespoons instead of 6 (when doubled)
- I did olive oil instead of butter
- I topped with these maple crunchies. Takes it to the next level! I got them in VT and you can buy them on Amazon, but there are cheaper versions from other brands that look just as good (I’ll buy those when these run out!) just make sure they’re 100% maple sugar- no other ingredients
- We also topped with Artisana Organics Cashew Cacao spread (basically a refined sugar free, high quality Nutella) in addition to the sautéed apples.
- I did them with the powdered sugar glaze for the pic and that one day, but not through the week so we didn’t have as much sugar but it was delicious
- For gf, I have not tried, but in the past when making things gf, I used a gf flour blend I love Namaste Perfect Flour Blend!
- Again, I haven’t tried with this recipe, but when I’ve needed to sub eggs in the past, 1 do 1 tablespoon ground flax for 3 tablespoons water. That typically works well for pancakes.
