Need a unique and delicious spring salad?? Look no further! I’m always looking for unique recipes that are healthy, delicious, but have a cool twist and this one is perfect! Every member of my family absolutely loves this salad!!

Recipe Notes:
- I’m sure this salad is delicious on the grill, but we don’t have one, so we just roasted the asparagus in the oven at 400 for 20-30 min
- For the croutons, you can use any bread (we have even used sandwich bread). I chopped it up into crouton size squares, drizzled olive oil in my pan, added bread, tossed to coat, sprinkled salt snd garlic powder and just kept turning until it was crunchy. Obviously use gf bread for gluten free!
- We didn’t have anchovy paste, so I omitted it
