Bagels sounds intimidating, but this recipe is crazy easy! If you want to see, check my highlight bubble on my IG under “bagels”, that will walk you through the starter and everything. Below is a pic by pic process. The recipe is from The Clever Carrot. I love her recipes SO much!
Mix the starter, water, and coconut sugar then flour and salt and let sit 45 min-1 hr with a damp cloth over
Work into a smooth ball and let rise 10-12 hrs until doubled in size (her recipe has specific times for temp of your home). Cover with plastic
After it doubled in size, gather into a ball
Divide into 8 balls (16 if doubling) and let rest 10 min
Form holes in the middle and let rise, covered with damp cloth 15-20 min
Boil
Add toppings, bake 20 min and enjoy!
Eat warm with butter and feel proud
Recipe Notes:
- My favorite topping is Maldon flaky salt! Sprinkle it on, don’t dip!
- The honey adds a nice touch but If you don’t have honey on hand, you can skip it and they will still be great!
- I use coconut sugar in place of normal
- Instead of flattening the dough, I just cut it from a ball and kept them in balls
- Since it is sourdough, that means it’s best done in 2 days- make the dough at night, let rise for an hour, then work into a ball, let rise 10-12 hrs, divide into balls, rest 10 min, put holes in and rise 15-20 min then boil and bake. It sounds more involved than it is – promise!
- Since they keep best for a couple days at room temp, I double the recipe then keep most in the freezer and pull them out in the morning or night before
- I use Sunrise Flour Mill bread flour and highly recommend it. It is such high quality and they often give a free starter with purchase that I highly recommend!
