I am always looking for ways to get easy to digest veggies down us, so I try to juice every now and then. The goal is juice every other week, make a triple batch, and drink it for 3 days (the max fresh juice lasts) then the other weeks drink the Power of 7 organic green drink for a few days from Trader Joe’s. So far, this has been really manageable. Dal washes and peels, I chop, blend, and strain. The juices have felt very invigorating.
One thing to watch out for in juicing is thinking abt the amount of sugar you are consuming. Again, you know I’m not abt tracking or anything strict like that with food, but for us, we try to do veggie juices with just a tiny bit of fruit. It works great for us, but took Dal some getting used to.
Lastly, we have not invested in a juicer since they take up so much space and are so expensive! We blend in our Blendtec then strain. maybe someday we’ll get a juicer, maybe not, but for now this works just fine!
Now, here is my favorite juicing recipe we have tried! I love beets and all their health benefits, plus I thought this would be a fun Valentine’s recipe! I do have to say, this is my favorite juice recipe I’ve tried. Dal, however, drinks it because he knows it’s good for him, but he hates beets with a passion so this is his least favorite. If you fall in his camp, you may want to find another recipe, if you love or even tolerate beets, I think you’ll love this. Recipe here from Minimalist Baker.
Recipe Notes:
- I just buy the frozen ginger cubes from TJ’s and use those
- If doing this in a blender, I recommend blending the easy things first to get a juice going, then adding the harder stuff. Your blender will tolerate this better. I did need to add the suggested amount of apple juice
- We triple the recipe which usually gets us through a few days, but for this recipe, we drank it in one day (so 1 1/2 servings for each of us). Next time I’ll 6x the recipe so we can both have it for a few days!
- I had half a raw zuchinni leftover from dinner and threw that in there too (with recipe tripled) and liked it.
