I threw this recipe together one night in a rush and didn’t expect it to be anything special, but as we ate it and all went crazy for it, so I knew I had to share!
Recipe Notes:
- I cook mine longer than the ones in this pic (40-50 min as stated in the recipe), but this pic looked better than the more crunchy one 😉
- The onions will usually be charred after this, so we typically pick them out, but I keep them in the recipe since they add so much flavor to the potatoes!
Ingredients
- 3 cups creamer potatoes chopped into 1 inch cubes
- 1/2 a yellow medium onion or 1 small onion, thinly sliced
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1 1/2 teaspoons salt
- 1/4 teaspoons fresh ground pepper
- 2 1/2 teaspoons Italian seasoning
Method
- Preheat oven to 425 and line a baking sheet with parchment paper
- Stir together potatoes, onion, garlic, and olive oil
- Add salt, pepper, and Italian seasoning. Stir until everything is fully covered
- Bake 40-50 min until crunchy. If they bake too long, they’ll become so crunchy they’re hard, so watch carefully near the end!
