I love green smoothies, but in winter, I tend towards warmer foods. This is the perfect warm, cozy, and nourishing breakfast. As an added plus, it’s the perfect meal prep breakfast because who has time to roast veggies in the morning?
This recipe is an adaptation from this recipe by Sweet Laurel and a recipe from Juanique Roney’s Gutsy Health program. In hers, she roasts Brussels sprouts, bacon, and out Brazil nuts. I received Juanique’s permission to post my adaptation (I made sure to check since hers is a recipe you pay for). I changed the amount of avocado oil, added bacon, Brazil nuts, hemp seeds, and onion salt in Sweet Laurel’s version. I added eggs, spices, and cheese (from the Sweet Laurel recipe) to Juanique’s.
Ingredients:
- 1.5 pounds brussels sprouts
- 1/2 cup raw bacon, chopped in 1-2 inch pieces
- 1 teaspoon avocado oil
- 1/2-3/4 teaspoon real salt (I love Redmond)
- Freshly ground pepper
- Pinch cayenne pepper
- A few shakes onion salt (I love Trader Joe’s brand that has added spices in it)
- 4-6 eggs
- Hemp seeds (optional)
- Brazil nuts (2 chopped tiny per ramekin)
- Pecorino Romano (for topping)
Method:
- Preheat oven to 400
- Wash thoroughly and halve the Brussels sprouts
- Toss Brussels sprouts with avocado oil and onion salt and cayenne
- Place on a parchment lined baking sheet
- Sprinkle chopped bacon over
- Sprinkle salt and pepper and toast for 40 min and refrigerate when done roasting (unless eating then
- When ready to eat, put desired portion in ramekin or small dish, top with 1-2 eggs (or however many you’d like), salt and pepper and bake at 400 5-8 min. I do mine around 7-8 minutes
- When done top with finely chopped Brazil nuts, hemp seeds, and cheese and enjoy!
Recipe Notes:
- I HATE Brazil Nuts, but I learned from Juanique how important they are especially for those with thyroid issues. This prompted me to research and decide to incorporate them more into my diet. By VERY finely chopping them and the above combo, I really enjoyed them! There’s a lot about them, but here’s a good summary of some of their great qualities. To summarize the article they are great for brain, thyroid, immune system, reducing inflammation, etc!
- The cheese has an extra depth of flavor, but omit for df. I do this all the time too and it’s just as great!
- I have a post coming about this, but I prefer real salt over any kind and Redmond Real Salt Kosher style is my favorite. A quick note about salt, not only is it not bad for you, it’s important, but you have to buy the right kind.
