I’m not a big plain marshmallow person, but I have always loved marshmallow fluff and toasted marshmallows! I never buy marshmallow fluff because the ingredients are less than desirable, so I was SO excited when I saw Lexi’s Clean Kitchen post this recipe and a recipe for refined sugar free Ho Ho’s that can go along with it! Genius! This stuff tastes even better than the original but has ingredients your body actually recognizes:)
Anyway, this stuff is amazing! It can seem intimidating, but promise, it’s easy!
Recipe Notes:
- You do need a food thermometer for this. I love Thermapen, but anything that’s accurate works. If you do go with Thermapen, wait for a 20% off sale. They happen quite often
- If you are vegan, I would assume you could sub maple syrup for honey. I’ve done it in other marshmallow recipes following basically the same concept, so it should work fine, but I have not tried it in this recipe, so I can’t vouch for it.
- This would be great as an icing on cupcakes, great with fruit dipped in it, “fluffer nutter sandwiches (pb and marshmallow cream), homemade Ho Ho’s, etc!
- Don’t store it in the fridge. Store covered at room temperature!
