This isn’t your classic beef stew (which is also great). It’s full of incredible flavors, the meat just falls apart and just one of those meals that makes the taste buds so happy! The recipe is from Half Baked Harvest!
Recipe Notes:
- I didn’t have chuck roast, so I used tri tip and only had abt 1 1/2 lbs so I halved the recipe and it worked out great!
- My husband doesn’t do well with spice so I omitted red pepper flakes
- I topped with feta
- Omit cheese for dairy free
- For grain free or more veggies, serve over cauliflower rice instead of normal rice
- I followed the Instant Pot instructions 🙂
- A note on meat: I love grass fed beef. I currently use Butcher Box and really love it. I wish the beef was both grass fed and organic, but I still feel the quality is awesome. It’s also from cows from Australia 100% grass fed and finished. We don’t eat very much meat, so we buy the smallest box and it takes us a long time to go through it. Our last box was roughly 6 months ago and we’re still chipping away at it, so to us it makes sense financially, but if you eat lots of meat and have access to a great grass fed and finished or organic meat, it may not be the most financially feasible thing. I also love their seafood and their chicken is organic (though I haven’t tried the latter) but don’t recommend their pork. The pork is fed with GMO soy and corn (I’ve been having a really hard time finding pork that isn’t fed with GMO soy and corn, but still looking! If you have recommendations, please send them my way!)
