I’m impressed by anyone who creates their own recipes. Paleo Gluten Free Eats (currently Kaylie’s Healthy Recipes), however, takes it to such a unique level. She thinks of things I never would’ve thought of and they taste INCREDIBLE.
This is one of those. In addition to this it’s gluten free, dairy free, grain free, and vegan! You may wonder how a cauliflower pita holds up, but as you can see in the pic, it folds and holds up much like a normal pita would!
Notes:
- I’m typically for throw together quick meals and I usually don’t like something with lots of steps. This is not quick and has the tortilla, sauce, and roasted veggies. I tried it though because my mouth was watering for it so if you do it on meal prep day and make enough for the week, then it’s totally doable! It makes 4 tortillas about the size of your hand as a whole (palm and fingers) and next time I will double it, but the sauce and veggies is enough for prob abt 6
- I added an extra tablespoon each of arrowroot and coconut flour. I think this was needed because I used frozen cauliflower rice
- I used frozen cauliflower rice from Trader Joe’s. It worked great, just make sure to get all the water out after! I used a dish towel and just kept ringing it!
- I used an extra cup of cauliflower for roasting
