These muffins can be made in abt 10 min and are so amazing! The recipe is from Pimch of Yum! My adjustments below:
Recipe Notes:
- You can use any kind of plain yogurt (doesn’t have to be Greek)
- I use this choc chip recipe to keep refined sugar free and dairy free
- If you don’t feel like making your own choc chips and are okay with having refined sugar, Guittard is amazing and high quality but not dairy free. My other choice when going for conventional choc chips and dairy free are Enjoy Life.
- If gf, make sure to use gf oats (preferably organic since oats and other grains are often high in glyphosate)
- I always double it to make 24 regular size muffins + a few mini muffins (abt 6-8)
- While you can make it in the blender, I prefer to mix all dry ingredients, then all wet in a separate bowl, then combine. This ensures it mixes well and I don’t over mix (which makes things tough
- To make dairy free, use a plain, dairy free yogurt
- I had to cook mine 5-10 min longer, but not sure if that’s just my oven. Just be sure to do the toothpick test
- You can try subbing flax eggs (1 tablespoons ground flax + 3 tablespoons water per egg) for real eggs for vegan or egg free, but I have not tried it in this recipe. If you do, just remember to cook 10 min longer
