The Holiday season is just beginning and that often means lots of hosting and often things being a bit more busy! That means this a great time to simplify! My go-to meals when things get busy or we’re hosting are casseroles and soups! Both are so fast, great leftovers, can be made ahead, and easily customizable and easy to make healthy!
This recipe is from 6 Sisters and the original recipe is here and the recipe with my modifications are below!
Recipe Notes:
- We like ham or chicken sausage for the meat
- We use tomatoes, onions, and mushrooms for the veggies
- We subbed almond milk for normal
- We subbed 12 Oz frozen cauliflower rice (frozen section at TJ’s) for hash browns
- We topped ours with Coyo, avocado, and pico de gallo,
Ingredients:
- 1 lb chopped meat. We love organic ham (we love Applegate) or organic sausage (chicken or pork- even spicy Italian is good)
- 2 cups chopped veggies (we do a combo of yellow onion, tomato, and mushrooms)
- 12 eggs
- 1 cup milk. Can be any kind of unsweetened dairy free milk. We used almond milk and it was great.
- 1 lb shredded hash browns or 12-16 oz riced cauliflower. I HATE soft hash browns, so I crisp them before putting them in the casserole. Just be sure to let them cool so the eggs don’t scramble. I did 12 Oz frozen cauliflower rice (I think thawed would work fine too, but haven’t tried it)
- 1 cup cheddar cheese (we but European cheese (can buy for a great price at TJ’s) because it’s typically made with A2 milk instead of A1 so is easier to digest for many). If dairy free, I think you could omit the cheese, but I have not tried this
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Sour cream or Coyo (unsweetened coconut yogurt- tastes like sour cream), avocado, and pico de gallo (optional for topping)
Method:
- Preheat oven to 350
- Beat eggs and milk
- stir in remaining ingredients (make sure meat and hash browns are cooled)
- Put in greased 9×13 and bake 45-55 min until we’ll set
- (Optional) Serve topped with cheese, sour cream or Coyo, pico de gallo, and avocado
